I was bored today and I had a few brown bananas sitting in my freezer so I did what every woman does when she’s bored and has brown bananas–made Banana Chocolate Chip Muffins!
I’d never made Banana Chocolate Chip Muffins before–heck, I’d never made any muffin before–so this was a whole new experience for me.
I searched online for recipes, and I found one that looked good at canadianliving.com. I had most of the ingredients already, except for the buttermilk and chocolate chips. (Who doesn’t have chocolate chips on hand?!)
Cooking with buttermilk was new to me also and I wasn’t sure if it was supposed to be almost lumpy and kind of sour-smelling, so I googled, “is buttermilk supposed to smell sour?”. Apparently that’s the way it’s supposed to be. Thank goodness for the internet otherwise I would have dumped that right down the sink!
Even though I’d never made muffins before I had this strange motherly voice in the back of my head saying, “Don’t overmix the batter!” So I willed myself to stop mixing when the dry components of the mix had moistened. Boy am I glad I listened to the voice in my head (this time!).
The final product was light, fluffy, gooey, and warm (mostly because I couldn’t wait for it to cool down).
